What is the difference between a Seasoning and a Rub?
Seasoning is anything used to flavor an ingredient or dish.
Rubs are most often applied to meat where the spices, herbs and chile flavoring is going to marry with the meat for two – twenty four hours before cooking. (for seafood we tend to let the rub marry for no more than 30 minutes).

How does the Scoville rating calculate the rank of chile peppers for heat?
The Scoville scale is a measurement of the pungency (spicy heat) of chili peppers – such as the jalapeno, the bhut jolokia and the world’s current hottest pepper, the Carolina Reaper. Scoville heat units (SHU), is a function of capsaicin concentration. Capsaicin is one of many related chemicals, collectively called capsaicinoids. The scale is named after its creator, American pharmacist Wilbur Scoville. In Scoville’s method, an exact weight of dried pepper is dissolved in alcohol to extract the heat components (capsinoids), then diluted in a solution of sugar water. Decreasing concentrations of the extracted capsinoids are given to a panel of five trained tasters, until a majority can no longer detect the heat in a dilution. The heat level is based on this dilution, rated in multiples of 100 scoville heat units.

Can you grow chile plants like house plants?
Yes, Chile Plants can be fun houseplants. In addition producing an abundance of beautiful flowers you can eat the ripe chilies. Certain smaller varieties are better as houseplants. Try Bolivian Rainbow or Ornamental Thai plants. They ripen quickly and are prolific producers.
